♦ 1 whole wheat English muffin (or a large slice of whole wheat bread)
♦ A quarter of a ripe avocado; or more
♦ salt and pepper
♦ 1 tsp olive oil
♦ red pepper flakes (optional)
Toast the bread. Remove and carefully spread the avocado over the toast, then drizzle with olive oil and season to taste with salt, pepper and (optional) red pepper flakes. Serve immediately.
