Mint-Chocolate Birds’ Nests

MINT-CHOCOLATE BIRDS’ NESTS
Serves: 25 (yields between 2 to 3 dozen cookies)

Ingredients
♦ 2 (6-oz) packages of crunchy chow mein noodles
♦ 2 cups semisweet chocolate chips
♦ 1 cup milk chocolate chips (or semisweet)
♦ 1 tsp peppermint extract (or extract of choice)
♦ 1 (10-oz) package Cadbury mini chocolate eggs

Directions:
In a large microwave-safe bowl, melt chocolate chips until smooth, stirring every 15 to 20 seconds. Carefully fold the chow mein noodles into the melted chocolate.

Line two baking sheets with wax or parchment paper. Using a tablespoon measure, spoon chocolate “nests” onto the paper, measuring each scoop to preferred size. Top each nest with one mini chocolate egg – place the pans into the refrigerator and allow to set, about 30 minutes (the freezer also works). Serve once the chocolate is set (nests can also be stored in tupperware for up to a week).
