BAKED TILAPIA with MANGO-AVOCADO SALSA

Serves: 2 (with extra salsa for chips!)
Ingredients
For Salsa:
♦ 2 ripe mangoes, peeled, pitted, and diced medium
♦ 1 1/2 avocados, halved, pitted, peeled, and diced medium
♦ 1 (15-oz) can black beans, rinsed and drained well
♦ 1/2 medium red onion, minced
♦ 1 small jalapeño, minced (remove the seeds for less heat)
♦ 1/2 – 1 tsp ground cumin
♦ ½ medium lime, juiced
♦ 2-3 tablespoons extra-virgin olive oil
♦ 1/2 teaspoon coarse salt
♦ handful chopped fresh cilantro leaves
For Tilapia:
♦ 2 tilapia fillets
♦ olive oil
♦ Old Bay Seasoning (or other Cajun seasoning)
Directions:
For salsa: Toss all ingredients to combine; chill until ready to use.
For tilapia: Preheat oven to 400 degrees F. Place tilapia filets in a small baking pan (pyrex glass works great for this) and rub both sides with oil and seasoning. Bake for about 20 to 25 minutes, or until slightly golden. Place one filet on a plate and top with salsa; serve tilapia with chips (for all that extra salsa!)
