Serves 3 to 4
♦ 20 spears fresh asparagus, ends trimmed
♦ 20 slices of Prosciutto di Parma
♦ Olive oil
♦ Salt & pepper
Preheat your oven to 450 degrees F. Line a large baking sheet with aluminum foil, and set aside.
Wrap one slice of prosciutto around each asparagus spear, spiraling up. Place the spears, seam-side down, onto the baking sheet.
Place the sheet into the oven and bake for 5 minutes – remove the pan, and shake it back and forth until the spears roll over. Return to the oven for an additional 5 minutes (or until the prosciutto is crispy). Serve immediately.
