CLASSIC GRILLED CHEESE
♦ 2 cups shredded cheese: cheddar, muenster, or a variety
♦ 4 slices good quality bread (ex. sourdough)
♦ Olive oil
Lightly butter the outsides of the bread, and assemble the sandwiches – heat a small amount of olive oil in a cast iron or nonstick. Carefully lower the assembled sandwiches into the pan.
Cook for 2 minutes, and then carefully flip the sandwiches. Allow to cook for 30 seconds or so and then place a lid on the pan; cook for an additional 1 to 2 minutes. Continue this process (flipping the sandwiches and covering the pan) until the bread has reached the desired level of “toasted”. Serve immediately.
