BLACK BEAN QUINOA MEATBALLS with

Serves: 4 to 6
♦ 1/2 medium size onion or 1 small onion, cut into large chunks
♦ 7 to 8 medium baby carrots
♦ 1 tbsp nutritional yeast
♦ 1 tsp dried oregano
♦ 1 (15-oz) cans black beans, drained and rinsed
♦ handful fresh cilantro
♦ 3/4 cups cooked, mashed sweet potatoes
♦ 3/4 cups cooked quinoa
♦ 1 tbsp lime juice
♦ 1 tbsp flax meal
♦ 1/2 cup panko bread crumbs
♦ salt, to taste
Preheat oven to 350 F – spoon the mashed sweet potatoes, quinoa and half of the black beans into a large mixing bowl; set aside.
Place the onion into a food processor and pulse until finely chopped – add to the quinoa and sweet potatoes. Next, add the baby carrots to the processor and pulse until finely chopped – add to the mixing bowl. Place remaining black beans into the processor along with the handful of cilantro – process until a smooth paste. Pour into the mixing bowl.
Add nutritional yeast, dried spices, flax meal & panko crumbs – mix again until combined well. Form into meatballs and line along a baking sheet. Cook meatballs for approximately 25 minutes, rotating every 6 to 7 minutes to ensure even cooking.
