BLUE CHEESE MASHED POTATOES with ROASTED GARLIC
♦ 2 garlic cloves
♦ 2 lbs red potatoes, cubed
♦ 1 cup crumbled blue cheese
♦ 1/2 cup milk
♦ 2 tbsp chopped fresh parsley
♦ freshly ground black pepper and salt, to taste
Preheat one to 400 degrees F. Tightly wrap the garlic cloves in aluminum foil with a little olive oil, and cook until roasted; about 45 minutes. Peel the cloves and set aside.
Meanwhile, bring a pot of water to boil. Add the potatoes, and cook until tender, 15 to 20 minutes. Drain the potatoes and add to a food processor, along with the blue cheese, roasted garlic cloves, and parsley. Pulse a few times to break down the potatoes, and slowly add the milk until the potatoes reach a desired consistency (add more as needed).
Salt and pepper the potatoes to taste and serve hot.
