♦ 1 1/2 pounds Brussels sprouts, halved
♦ 4 tablespoons good olive oil
♦ 1 teaspoon kosher salt
♦ freshly ground black pepper
♦ 2 strips of bacon, finely chopped
♦ 1/3 cup crumbled blue cheese
Cook the sprouts: Preheat the oven to 400 degrees F. Toss the sprouts with the olive oil, salt and pepper. Arrange the sprouts on a roasting pan, lined with tin foil. Roast the sprouts for 35 to 50 min, stirring every so often, until nicely browned.
Cook the bacon: Meanwhile, cook the bacon in a small frying pan until crispy.
Once the sprouts are done, toss with the bacon and cheese and serve warm.
