ROOT VEGETABLE MASH with ROASTED GARLIC and THYME
Serves: 6
INGREDIENTS:
♦ 1 head of garlic, top sliced off
♦ olive oil
♦ salt and freshly cracked black pepper
♦ 1 pound carrots, peeled and chopped
♦ 4 medium sweet potatoes, peeled and chopped
♦ 1/4 cup unsalted butter
♦ few sprigs of thyme
DIRECTIONS
Prepare the garlic: Preheat oven to 400 degrees F – drizzle olive oil over the top, and wrap the entire hear in garlic. Set onto the oven shelf, and allow to roast for 40 minutes. Remove from the oven and allow to cool.
Roast the vegetables: Toss the sweet potatoes and carrots with oil and salt, and pepper – set onto a foil-lined roasting pan, and roast until cooked through (for 40 to 45 minutes).
Once cooked through, set the vegetables into the food processor. Remove the cooked garlic from the individual cloves, and add to the processor along with the butter, thyme and other root veggies. Salt or pepper the mash to taste, and serve warm.
